Whole wheat orzo that makes you feel comfy

LEMON GARLIC SHRIMP WITH ORZO
Ingredients for the dressing-
- ¼ cup fresh lemon juice
- ½ cup olive oil
- 2 tbsp dill (ideally fresh), chopped
- 2 cloves garlic, minced
- ½ tsp salt
Ingredients for the shrimp and orzo-
- 1 lb. raw shrimp, peeled and deveined
- 1 cup orzo pasta (whole wheat if possible)
- 1/3 cup feta cheese
- 1 bell pepper, diced
- ¼ cup capers
- 2 tbsp scallions, chopped
- 1 tbsp fresh oregano, chopped
In a small bowl, whisk together all the dressing ingredients. Pour ¼ cup of the liquid over the shrimp and toss to coat. Refrigerate for 15-20 minutes.
In the meantime, cook the orzo according to instructions on the package. Drain and transfer the orzo to a medium bowl. Add the rest of the dressing and the feta cheese. Toss. Add the pepper, capers, scallions and oregano. Toss again.
Cook the shrimp on a grill pan over high heat. Turn them once, cooking 4 to 5 minutes total, until cooked through.
Serve the shrimp beside or over the orzo.
*If you are only making the shrimp, use 4 tsp lemon juice, 3 tbsp oil, 2 tsp dill, 1 clove garlic and a light sprinkle of salt for the marinade.
*If you are only making the orzo, use 3 tbsp lemon juice, 1/3 cup oil, 4 tsp dill, 1 clove garlic and a light sprinkle of salt for the dressing.
