Why not add a super food to a classic Middle Eastern snack?! Homemade hummus is naturally full of crucial vitamins, minerals and various feel good foods. Adding in a roasted red pepper just ups the ante (and makes it prettier too).
Roasted Red Pepper Hummus – Feel Peaceful
- 1 can chickpeas, drained and rinsed, reserving 2-4 tbsp of liquid from the can
- 2 tbsp tahini
- 2-4 cloves garlic, to taste
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1 tbsp salt
- 1 roasted red pepper (roast it yourself, it’s easy! Instructions here)
Combine all the ingredients, except the extra chickpea liquid, in a food processor. Pulse until smooth. Blend in the reserved liquid a little bit at a time, until the desired consistency is achieved.
Serve with fresh parsley, pita and/or baby carrots.
