Houston food truck makes its way one healthy wrap at a time

HOUSTON, TX – It’s Friday guys. But it’s not just any Friday. It’s Food Truck Friday and this month we’re paying homage to classic wrap.

“It’s kind of like a play on the movies,” truck owner Guli Essa explains, “when you finish a movie, you say, ‘it’s a wrap,’ and since I used to live in L.A. and by Hollywood I thought, ‘well, I’ll kind of bring that here,’ and so all of my wraps have names of movies or something related to the movies.”

Climb aboard, It’s a Wrap.

“My background is from India,” Guli explains, “but I didn’t want to have an Indian food truck. I wanted it to reflect the type of food that I like to eat, which is something from everywhere every country.”

In the food truck world, Guli Essa is an old-hand, the little orange truck has been wrapping and rolling for more than two years, already. But Chew on This: Chef Guli will be the first to tell you, she’s not a career chef by trade.

“I worked in retail for over twenty-five years, and the store that I was managing in the Galleria decided to shut down and give me two-day’s notice – told me I wasn’t going to have a job – so I’d always wanted to start my own business and was kind of burnt-out with retail, so I decided to do this.”

It seems to be working. At the downtown farmer’s market, folks lined-up to take a stab at her “healthier-than-most” food-truck-fare. Plus or minus the fried mac-and-cheese balls. I mean, you can’t eat healthy all the time, right?
