This intensely flavorful Filipino chicken dish melts in your mouth! It's a yummy combination of grounding saltiness and uplifting lemon juice. Serve with a neutral grain like brown rice and your veggie of choice.
- 2 tbsp. extra virgin olive oil
- 5 cloves garlic, chopped
- 1 inch ginger, minced
- 2 lb. boneless skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup lemon juice
- 1 chicken bouillon cube
- 3 bay leaves
- Brown rice for serving
In a large skillet, warm the oil over medium heat. Add the garlic and ginger and cook for about 5 minutes, stirring often. Add the chicken and cook for 1 minute per side, to lightly brown.
Add the soy sauce, lemon juice, bouillon and bay leaves to the pan. Bring the mixture to a boil, and then cover the pan, reduce the heat and simmer for 30 minutes, stirring occasionally. Remove the lid and continue to simmer for about 25 minutes more, until the liquid is somewhat thickened and significantly reduced.
Serve with brown rice.
