This recipe tastes like a treat, but it is jam-packed with broccoli. Serve as an appetizer, or with a soup or a salad.
Stuffed Broccoli Bread - Feel Comforted
- 1 bunch of broccoli, finely chopped (stems included)
- 1 tbsp extra virgin olive oil
- 1 tsp salt
- Fresh pizza dough
- 6-8 cloves garlic, minced
- 6 oz. fresh mozzarella, sliced
- Olive oil cooking spray
Preheat oven to 350F.
Toss the broccoli with the olive oil and salt. Transfer the mixture to a foil-lined baking sheet. Bake for 30 minutes.
Roll out the dough. Lay the cooked broccoli in a line through the center of the dough (narrow enough for the sides to eventually fold up to cover it). Distribute the garlic and mozzarella over the broccoli. Now fold the sides of the dough up and the ends in to form a closed loaf. Spray the top with olive oil. Bake for 30 minutes directly on an oven rack with a pan on the rack underneath (if the bread doesn’t seem sturdy enough for this, cook on a baking sheet instead). Use a towel to remove the bread from the oven. Cut into pieces to serve.
