Mint Beet & Goat Cheese Toast: A radiant and zesty snack

This radiant recipe makes a lovely snack or side dish. It’s nutritious, and indulgent at the same time!


Mint Beet & Goat Cheese Toasts

  • ¼ cup diced beets (cooking instructions below)
  • 1 slice of high quality bread, or a handful of crostinis if enjoying as an appetizer
  • 1 small garlic clove
  • 2 tbsp goat cheese
  • 1 tsp extra virgin olive oil
  • Salt and pepper to taste
  • 2-3 stems fresh mint, leaves chopped


To cook the beet, submerge in a small pot with water. Bring to a boil, and then reduce the heat to a simmer, cover, and cook for about 45 minutes until soft. Rinse the beet in cold water. Peel off and discard the skin. Dice it up.

Toast the bread.  Rub the garlic into the toast, and lather the goat cheese on top. Spoon about ¼ cup diced beets over the cheese. Top with oil, salt, pepper and fresh mint.

Serves 1.
