RISSOTTOThis easy-to-make side dish is intriguingly tasty and seriously bold. You can skip the jalapeno if spicy doesn’t tickle your fancy. Either way, it’s a richly delicious dish!



Jalapeno & Garlic Risotto – Feel Comforted

  • 1¼ cup vegetable broth
  • 1 tsp butter
  • ½ cup basmati brown rice
  • ½ red pepper, minced
  • 2-3 cloves garlic, minced
  • 3 tbsp chopped jalapeno (from a jar)
  • ¼ cup grated Parmesan


Bring the broth to a boil and add the butter. Stir in the rice, red pepper, garlic and jalapeno. Reduce heat to a simmer, cover, and cook for 45-50 minutes.

Stir in the Parmesan.

Serves 2.
