Fresh cilantro and lots of lemon make this naturally creamy dip alive and full of flavor. It's ready in a minute, great for entertaining, and it won't spoil your appetite.
- 1 (15 oz.) can cannellini beans, drained and rinsed
- 1 clove garlic
- ½ cup loosely packed cilantro
- 2 tbsp extra virgin olive oil
- 2 lemons, juiced
- Salt to taste
Combine all ingredients in a blender or food processor. Blend until creamy.
Serve with crackers or vegetables.
