This easy swordfish recipe is filling and flavorful.  The roasted root vegetable recipe is here!

  • 2 lbs. swordfish, about 1 in. thick
  •       Marinade:
  • 8 tsp. soy sauce
  • 2 tbsp. fresh lemon juice
  • 1/4 cup olive oil
  • 1 small clove garlic, pressed
  • 1 tsp. lemon rind
  • 1 tsp. Dijon mustard
  • Handful of fresh parsley, chopped
  • Lemon wedges

Use a fork to poke a few holes in the fish, and then place it in a large Ziploc bag.  Use two bags as needed.

Combine the marinade ingredients in a small bowl, and then pour the mixture into the bag(s) and seal it up. Let the fish marinate in the refrigerator for 3-4 hours, carefully jostling the bag from time to time.

Place the fish in a shallow baking pan. Pour half of the marinade on top. Broil for 6-8 minutes. Carefully turn the fish over, brush on some more marinade and continue broiling for another 6-8 minutes.

Garnish with lemon wedges.

Serves 2.
