Zesty Rice Salad
- 1 clove garlic
- 3/4-1 in. piece of fresh ginger
- 1 tsp. salt
- 1 tbsp. curry powder
- 3 tbsp. lemon juice
- 1/2 cup extra virgin olive oil
- 1 cup cooked brown rice
- 1 cup chopped fresh spinach
- 1 cup red cabbage, chopped (or coleslaw mix)
- 2 green onions, chopped
- 5 button mushrooms, chopped
- 2 tomatoes, chopped
- 1/4 cup chopped carrots
To prepare the dressing, combine the garlic through olive oil in a blender and pulse thoroughly.
Combine the remaining ingredients in a large bowl. Pour roughly half of the dressing over the salad and toss well to coat. Reserve the remaining dressing for future use.
