Ruggles is back in Black

First, there was Ruggles, then Ruggles Green and now Ruggles Black - Chef Bruce Molzan’s latest endeavor.

Ruggles Black has the same great food of its namesakes, but it also offers Paleo cuisine. “Paleo diet is what they call the Caveman Diet. It’s based on Paleolithic times, what you ancestors would’ve eaten and really this is my interpretation of what they would’ve had, and it’s basically proteins, vegetables, fruits and nuts” explains Molzan.

This high protein, low carb diet is also gluten free and dairy free. “It’s fascinating to find such good meals could be prepared using, following the Paleo diet, including the desserts,” says crossfitter Todd Patterson.

Two of the most popular Paleo items at Ruggles Black are “The Big Sexy” (which looks like a small dinosaur) and Avocado Mousse.

The “Big Sexy” is a giant local pork chop that's cut, in-house. It's topped with a local duck egg, garnished with arugula, and served with carrots, broccoli, asparagus, and cauliflower mash.

The avocado mousse might sound “interesting” but it’s delicious! “It’s Paleo, it’s made with avocados, organic cocoa powder, coconut milk and of course agave, with coconut cream on top,” says Molzan.

No matter what dish you choose, Ruggles Black is a treat for your taste buds.
