This recipe is a healthier take on potato chips, but the flavor is actually bolder and more delicious (courtesy garlic). These babies taste like a treat but they won’t weigh you down. Love that.

Ingredients

  • 2 potatoes, scrubbed and cut into thin, 1/8 inch slices
  • 2-3 tbsp extra light olive oil
  • 2 tbsp dried rosemary or oregano
  • Salt to taste
  • 8+ cloves garlic, pressed

Instructions

Preheat oven to 450F.

Combine the potatoes, oil, rosemary or oregano, salt and three cloves of pressed garlic in a large bowl, and toss well to coat.  Arrange the potatoes in a single layer over two or more baking sheets.  Bake for 20-25 minutes, but flip the potatoes half way through.

Over each serving, sprinkle a little extra salt and press one clove of garlic.

Serves 4-6.
