Sausage & Spinach Soup: A warming, balancing meal

The sausage in this warm and nourishing soup gives it a hint of indulgence, while the rice helps fill you up. It is a well-balanced combination that tastes great too!

Sausage and Spinach Soup

  • 1 lb. chicken or turkey sausage
  • 8+ cups chicken broth
  • 1 (6 oz.) bag baby spinach, roughly chopped
  • 1 (14.5 oz.) can diced tomatoes
  • 1 cup brown basmati rice
  • 1 tsp. Italian seasoning

 

Remove sausage from casing. In a skillet over medium heat, brown the sausage and break it up with a wooden spoon.

In a large pot, bring 8 cups of broth to a boil. Reduce heat to a simmer, and then add the sausage, spinach, diced tomatoes and Italian seasoning. Return the soup to a boil and add the rice. Reduce heat, cover and simmer for 30 minutes. Stir-in more broth as desired.

Serves 4.
