Warm up with Nourishing Lentil Soup

This warming vegetarian soup is intentionally balanced to keep your energy stable and help you feel full, in a clean and healthy way.


  • 3 tbsp. extra virgin olive oil
  • 1 large onion, chopped
  • 8 garlic cloves, chopped
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 1 tsp. salt
  • 1 (16 oz.) bag dried lentils
  • 64 oz. vegetable broth
  • 1 can diced tomatoes
  • Fresh parsley for serving



Heat the oil in a large pot over medium heat.  Sauté the onion for 10 minutes.  Add the garlic, carrots, celery and salt and sauté, stirring often, 5-8 minutes more.  Add the lentils, broth and diced tomatoes and simmer, covered, stirring the mixture occasionally for 25-30 minutes, until the lentils are tender.  Season with extra salt and pepper and pepper to taste. Top each serving with fresh parsley as desired.

Serves 8.
